Healthy Oatmeal Muffins Recipe

These muffins are not only delicious, but they’re also a great way to start your day with something wholesome and satisfying. They’re easy to make, and the best part is, you can enjoy them guilt-free!

ingredients

  • 2 1/2 cups old-fashion oats (1 1/2 cups ground, 1 cup whole)
  • 2 TBSP old-fashion oat
  • 1 cup applesauce
  • 2 large eggs lightly beaten
  • 1/3 cup honey
  • 2 tsp vanilla
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 cup walnuts
  • 1/2 cups raisins
  • muffin tin

Directions

  1. Preheat the oven to 325°F (163°C).Place the oats on a baking sheet and toast until lightly browned, stirring once. This should take about 4 to 6 minutes. (If you prefer your oats more toasted, you can leave them in for about 10 minutes, as I do.) Let them cool to room temperature.
  2. Once the oats have cooled, add the applesauce, eggs, honey, and vanilla to the oats and stir to combine.
  3. In a separate bowl, mix the dry ingredients: baking powder, baking soda, salt, and cinnamon.
  4. Add the dry ingredients to the wet mixture and stir until fully combined.
  5. Fold in the walnuts and raisins.
  6. Spoon the mixture into a muffin tin lined with paper liners or greased.
  7. Bake for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let cool before serving.
